Temple Sowerby is a smart family-run country hotel where the kitchen specialises in a boldly modern style with plenty of exciting flavours and unusual ingredients. To start, perhaps Cumbrian rabbit loin, confit leg, pickled celery, celery juice and buttermilk dressing, or heritage tomato salad, burrata, larch roses, pickled rose petals and dill. Follow on with the seared Cornish brill, squid ink gnocchi, hung yoghurt, spinach, beurre noisette purée and sea vegetables, or a well-conceived vegetarian dish of potato and seaweed terrine, charred leeks, Innes Brick custard, seaweed mayonnaise and sea purslane. Finish with the delightfully named dessert of ‘Flowers & Herbs’ - flowering currant granita, angelica ice cream, yoghurt mousse, buckweat praline and wood sorrel.
