Temple Sowerby is a smart family-run country hotel where the kitchen specialises in a boldly modern style with plenty of European influence. To start, try the imaginative flavours of the soy and ginger-cured salmon with coconut and jasmine rice, avocado and coriander sorbet, pickled lime and sesame nori. Follow up with the flavoursome poached and seared breast of Cumbrian chicken, confit leg, bacon toastie, leek and potato velouté in a truffled chicken jelly reduction. Finish with a well-executed spiced Bramley apple and oat slice, real apple parfait, yogurt sorbet and burnt apple marshmallow or, depending on the time of year, a hot toddy winter dessert.
