On the edge of Grasmere, this refurbished Victorian hotel sits in riverside gardens, with the panoramic sweep of the Lakeland fells as background. A starter of seared scallops and barbecued pork belly is enhanced by sweet potato purée and piquant spiced apple, or there could be grilled sea bass with shellfish risotto, lemongrass foam and leek julienne. Next up, the focus is on Lakeland lamb, served as roast rump and shepherd's pie with carrot purée, parsnip and potato rösti, green beans and rosemary jus, or roast venison with dauphinoise potato, Drambuie jus, braised red cabbage and roast pear. The finishing flourish is a well-risen raspberry soufflé with crème anglaise.
