Simon Rogan's other Cartmel place is right next door to L'Enclume, in an old weathered stone building that's been turned inside into an informal contemporary restaurant space, with slender steel columns under the old beams, and a relaxing casual feeling. Peter Smit now heads up the kitchen, but maintains the signature style of ultra-modern presentations of Lakeland produce, inspired by culinary traditions from far and wide. A crispy pig's ear makes a satisfying nibble while you consider the main menu business, which might open with smoked sea-trout and asparagus in a mustard dressing with crème fraîche, before main courses lead on with fine local meats – lamb flank, pork collar, beef bavette – or a fish such as gurnard with cauliflower, leek and preserved lemon. Vegetarian dishes tend to the robust end of the spectrum, perhaps roasted hispi cabbage with wild mushrooms and wasabi, and it's certainly worth a side-order or two, when the offerings may take in potato purée with beef dripping, or confit fennel with fermented celery and almonds. The breakfast tendency in modern desserts might produce a pear soaked in tea with granola and apple marigold, or else something of the night like dark chocolate torte with honeycomb and walnuts.
