After canapés and pre-dinner drinks you can soak up the dramatic views over Lake Windermere to the fells beyond from Burlington's Restaurant. The menu is altogether more wide-ranging than that usually found in such environments, embracing crab and langoustine aïoli with langoustine and saffron bisque, and poached turbot fillet with asparagus and oyster vichyssoise. The kitchen clearly has a grounding in the French repertory and adds its own spin on dishes. Cannon of lamb is accompanied by a haggis croquette, for instance, along with Jerusalem artichoke boulangère, mushy peas and mint purée. Puddings - and breads - are well up to snuff too, among them blueberry custard brûlée.
