Covering all the bases, Sligo Park's full-on leisure facilities and surrounding verdant countryside, means there's plenty of opportunity to build up an appetite. The dining option is the Hazelwood Restaurant, which has a warm contemporary finish of fuchsia and mauve. The kitchen stays true to Irish produce and delivers classic dishes with a few modern touches. A dressed crab and pineapple roll, for example, comes with goats' cheese beignet and sweet tomato salsa, and there's an oriental flavour to a main-course honey-glazed duck breast. Dry-aged steak comes with hand-cut chunky chips, crispy onion tempura and a whiskey cream sauce and desserts might offer up a classic crème brûlée.
