A classy modern hotel designed with plenty of vivid colour, notably reds and purples in the Classiebawn dining room. Here, the bill of fare is contemporary Irish cooking of notable technical ambition. Try a deconstructed egg for starters, the yolk crisped, the breadcrumbed white poached in red ale, dressed in horseradish crème fraîche. That might lead on to Ballinasloe lamb, the rack smoked over turf and heather, the shoulder herb-crusted, served with polenta and garlicky mash in minted jus with a jelly of Sheep Dip Irish whiskey. End with an inventive dessert such as gingerbread and candied peel crème brûlée with a baby pear poached in mulled wine.
