The Castle Leslie Estate extends over 1,000 acres and boasts two plush bolt-holes - the Castle and the Lodge - operating as separate country-house hotels. The boutique-style Lodge comes with Snaffles, a stylish contemporary restaurant with hand-carved ceiling, oak beams and sweeping countryside views. The kitchen keeps its finger on the pulse, turning out up-to-date country-house cooking. Haddock bavarois on smoked mackerel gets things under way, matched intelligently with Jerusalem artichoke crisps in coriander-lemon dressing. Then the estate venison gets a workout, arriving as loin and confit shoulder with celeriac, a port-poached pear and puréed blackberries. Finish with lime crème brûlée garnished with tropical fruits.
