In the restaurant situated in the one-time cow shed, expect a smart rustic finish with exposed stonework, a central fireplace and pretty terrace. The kitchen calls on the walled organic garden for supplies, and a smoker brings a potent aroma to proceedings. The menu is filled with dishes that reflect modern ideas and cooking techniques. Start with lightly smoked wood pigeon, burnt cauliflower, broccoli and an egg yolk, and move on to gurnard, succotash, mussels and sea veg. A meaty main course might be lamb rump, salt-baked celeriac, roast beets and rosemary jus, and finish with sheep’s yogurt soufflé and winter berry sorbet.
