Wilde’s restaurant at The Lodge is named after Sir William Wilde, a famous local surgeon who founded the first eye and ear hospital in Dublin. From its first-floor setting in the original Victorian building, the restaurant offers fabulous views over Lough Corrib. The kitchen aims to impress with its ambitious contemporary output (including a tasting menu) and local suppliers are name-checked on the menu. A starter of raw scallop céviche is matched with lime and coriander, largo and seaweed crisp, while wild halibut appears with bacon, cabbage and oyster. To finish, sea buckthorn, yuzu and buttermilk is a twist on lemon meringue pie.
