Built in the 19th century by a linen magnate, Ardtara is a country-house hotel set in glorious grounds. It's a particularly engaging spot for afternoon tea on a warm day, and the restaurant, with its real fireplaces and oak panels, is a smart backdrop for the bright, contemporary cooking on offer. A local flavour is ensured by the use of home-grown and locally foraged ingredients. A starter of tender pork belly arrives with piccalilli to cut through its inherent richness, and is followed by hake served in the company of Portavogie prawns and a light champagne sauce. To finish, passionfruit soufflé shows a touch of class.
