On the shore of Killarney's lower lake, Lough Lein, the hotel has been in the Huggard family for more than a century. Although the original house is much extended since 1820, Castlelough Restaurant retains its Georgian high ceilings, while its wide windows reveal one of those splendid views in which Ireland specialises. Expect local place names on the menu, as in Dingle Bay crab starter with apple and ginger mayonnaise, mango salsa, yogurt and cardamom purée. Try caramelised scallops with Annascaul pudding, squash purée, chorizo oil and shallot foam as a main course. Red wine-poached pear, citrus sorbet, Muscovado jelly and honeycomb tuile is a typical dessert.
