This small-scale country-house hotel exudes the sort of family-run, unpretentious tradition that keeps fans returning. John Sheedy has long-established local supply lines, and the kitchen garden provides fresh herbs and vegetables to supplement local organic meat and fish landed at nearby Doolin. Expect full-on, clearly defined flavours in a repertoire of uncomplicated modern dishes, such as crab claws in garlic and parsley cream, or ham hock terrine with celeriac and apple slaw, followed by baked fillets of hake on chive sauce with crab and leeks, or caramelised belly pork with cider sauce and mushroom mash. Classic lemon posset with fruit is a house speciality.
