The Scarlett has impeccable eco credentials, but first and foremost it's about hedonistic pleasures - wining, dining and some serious pampering. The kitchen team keep things focused on the West Country. Pan-fried gurnard rocks up with a jumble of stir-fried squid flavoured with chilli and ginger, while terrine of confit Cornish chicken comes in the company of celeriac remoulade and pickles. Next up, tender braised ox cheek forms the bedrock of an impressive main course (with potato and bacon terrine and white port sauce), and, to finish, white chocolate mousse is surrounded by a honeycomb shell, joined by pistachio cake and griottine cherries.
