This one-time Victorian railway hotel has been reworked in smart contemporary style. From its perch on the cliffs of the Lizard Peninsula, the rather grand restaurant presents those wild coastal views as a backdrop to inventive modern cooking based on tip-top ingredients from local producers. Pork belly is neatly offset with fresh apple, caramelised apple purée and sage, with granola and crackling adding crunch. Next up, pan-fried monkfish and razor clams come with buttered spinach, fennel and a foam of Cornish distiller Curio's samphire gin. To finish, poached rhubarb arrives with green apple sorbet, home-made ginger sherbet and maple granola.
