Nothing becomes a seaside town like a great white hotel, lording it over the waters from the headland. The elegant dining room has sweeping views over the bay and a menu that works its way round the seasonal calendar in both British and international modes. Many dishes come in two sizes, so that you might start imaginatively with roasted ling fillet wrapped in Parma ham in a sweetcorn and potato chowder with prawns and a near-bushel of fresh parsley. Main course might be a rump cut of superb local lamb on well-executed potato rösti. Good pastry is the hallmark of zesty lemon tart, served with raspberry coulis and clotted cream.
