The kitchen supports local suppliers and the concise menu buzzes with interest. Starters include butter-poached rabbit loin with pear and hazelnut salad, while mains see pan-fried grey mullet with new potatoes, chorizo and roasted red peppers. Game shows up in season - perhaps wild mallard with root vegetable gâteau, sticky red cabbage and damson jus - and to end there may be pistachio and olive oil cake with Pants-y-Gawen organic goats' cheese and black olive ice cream and roasted figs.
