After a hard day in the Kinmel's spa, the hotel's bright, contemporary Brasserie 1786 is the place to head for some plain-speaking food. Despite the chic, minimalist looks, the place has been around for a while, in the hands of five generations of the same family since, well, the clue's in the name. The menus work with the seasons, so turn up in autumn and there may be duck breast and bonbons with plum and pickled ginger to set the ball rolling, followed by seared loin and shepherd's pie of venison with sticky red cabbage, wild mushrooms and juniper. Dessert might be elderberry soufflé.
