A fresh take on traditional grill cookery in a Cheshire village

Chef-patron Aiden Byrne will be a familiar face to MasterChef fans, and known to anybody who has eaten recently at some of London's premier addresses. The focus is on traditional British grill cooking, with excellent prime materials and touches of modern technique. Pheasant breast is regally partnered with smoked foie gras, charred kale and hazelnut risotto. Fish shows up well, as in olive-oiled salmon with a robust fresh Niçoise salad. Topping and tailing it all might be a serving of home-made black pudding with a crisply poached egg (quite a feat) and caper and rocket salad, and comfort-pud finales like Bakewell tart with black cherry and Amaretto ice cream.
