Start with a drink in the Captain's Bar, then glide in state to a berth in the Crystal dining room, where pictures of polo-players adorn the walls. The cooking keeps things firmly anchored in European traditions, opening with crab salad on sun-dried tomato toast, or a blue cheese soufflé with poached pear in honey-mustard dressing. After this, beef arrives lavishly in two guises - slow-roast sirloin and braised shin-on green bean fricassée with wine-pickled shallots and fluffy chips. Salmon is cooked sous-vide and served with bok choy in port syrup, and bringing up the rear might be firm vanilla pannacotta with poached rhubarb, or lemon tart and raspberry sorbet.
