Unpretentious cooking from an industrious country-pub kitchen

A hospitable country pub where the owners deserve plaudits for their single-minded commitment to hard graft. The menu invites a lip-smacking start with crispy ham hock bonbons in a pool of vividly flavoursome parsley sauce with a poached egg and shards of Carmarthen ham. Main course stars pan-fried brill fillet with a supporting cast of pea purée, wilted baby spinach and brown butter breadcrumbs, or there could be rump and confit breast of splendid salt marsh lamb with celeriac purée and onion soubise. At the end comes a skilfully-made blackberry baked Alaska, or fine Welsh cheeses served with wheat wafers and walnut chutney.
