The Mansion has five acres of windswept hilltop to itself, and a commanding position overlooking Carmarthen Bay, with the remains of a Norman castle for a near neighbour. In the Moryd Restaurant, which enjoys those views to the full, a straightforward but conscientiously rendered menu of modern brasserie food is offered. Lemon-battered scallops with garden pea mayo and chorizo pannacotta might be the prelude to cutlet and slow-cooked shoulder of lamb with rosemary-scented dauphinoise, or a fish medley of sea bass, cod cheek and clams in fish stock velouté. Finish with the house treacle tart, served with citrus sorbet and pistachio paste.
