A whitewashed thatched village inn, the Pheasant maintains its centuries-old identity, with simple furniture under the oak beams. The dining room, done in hunting-print wallpaper with high-backed chairs at unclothed tables, plays host to European-influenced cooking that's full of fresh ideas. Crown Prince squash makes a hearty soup, garnished with a slick of crème fraîche. Main courses look to Italy for inspiration for the shellfish risotto and cavolo nero that accompany sea trout, or to France for a classically mandarin-sauced serving of duck breast and confit leg with rösti, red cabbage and beetroot. Finish with tremulous pannacotta, served with poached pear and rhubarb sorbet.
