Spoiler alert: no wine is made at The Vineyard, but they do have a world-class cellar that runs to a staggering 30,000 bottles by way of compensation. The vinous theme of this opulent, contemporary country house is apparent as soon as you’re through the door, with a glass floor above the wine vault. Style-magazine rooms, chic public areas and a glossy spa are what to expect, while Robby Jenks’s classy, intelligent cooking provides ample justification to explore that stupendous cellar. In an elegant split-level dining room, where a sweeping staircase sports a grapevine-style balustrade and striking artworks , the show opens with lobster ravioli, its richness cut with citrus bisque, grapefruit, pickled ginger and basil. A highly worked, razor-sharp main course brings slow-cooked chicken with liver parfait, a riff on broccoli including lustrous purée and charred stems, and pungent kimchi. At the end, a stimulating beurre noisette parfait is partnered with blueberries, nasturtium leaf, and lemon purée and espuma. Expert sommeliers guide the way through that astonishing cellar, starting with around 100 available by the glass.
