A Georgian mansion house built on a scale intended to impress, Coworth Park lords it over its acreages of rural Berkshire in shimmering wedding-cake white. It's surrounded by wildflower meadows and ancient woodland and comes fully loaded with a luxuriant portfolio of amenities, taking in everything from deep tissue massages to polo. It also has an elegant interior of high ceilinged spaces imbued with period splendour that is entirely agreeable and happily relaxed, including a very pretty dining room where guests can admire a copper-hued chandelier of oak leaves and the view over the rose terrace while mulling over menus fizzing with clever contemporary ideas. Here, Adam Smith’s cooking stands out from the crowd with an imaginatively modernised take on country-house cooking; whether you opt for the full-works seven-course taster or Best of British menus supplementing the main carte, you can expect top-class produce handled with light-touch dexterity. A starter of sautéed duck liver is balanced with pink grapefruit and basil, with puffed rice and black olive, and basil and onion brioche adding texture. Main course gives star billing to superb quality Waterford Farm lamb, timed perfectly pink, and served alongside an onion stuffed with braised shoulder, roasted shallot, turnip, onion purée and a killer jus. Fish is handled with similar creativity, perhaps stuffed Dover sole in the company of morels and risotto and sauced with Jura wine. Well-judged combinations of crystal-clear flavours are again to the fore in a dessert that riffs on a millefeuille theme, layering caramelised puff pastry with white chocolate parfait, vanilla cream, wild strawberries, lime, and strawberry sorbet, or an irresistible confection involving 62% Valrhona single estate chocolate, hazelnut and tonka bean ice cream might catch the eye; otherwise, go for a savoury finish with a perfectly ripened cheeseboard served with home-made breads and marinated figs.
