A gleaming-white balustraded Georgian house near the racecourse, Coworth is part of the Dorchester Collection. The kitchen's output is forward-thinking, with a plethora of modern classic dishes produced with scrupulous attention to detail. The now inseparable pairing of scallops and black pudding offers caramelised shellfish, texturally echoed by silky shallot purée, as an alternative to lightly spiced duck breast with beetroot and salt-baked turnips. Then perhaps a fish dish such as roasted turbot with bacon, mushrooms and red wine, or else Scottish beef fillet with oxtail suet pudding and watercress purée. Yorkshire rhubarb with blood orange, cheesecake cream and a scattering of crumbs makes a simple enough deconstruction to finish.
