Cyrus Todiwala (he of Café Spice Namaste) brings pan-Indian style to this airport hotel, in a clinically white atmosphere of lime-washed floors and café-style furnishings. Highly spiced, vividly seasoned food is the perfect antidote to corporate anonymity, and appears in the form of prawns in a hot sweet-and-sour sauce, or masala dosai, followed by chicken tikka with steamed rice, or Keralan-style duck breast. Seafood might appear as Goan king prawn curry with organic red rice, or grilled halibut fillet in coconut curry sauce on garlic and chilli risotto. Don't overlook vegetarian dishes such as the croquette of spinach and split peas in rich coconut curry.
