Last year saw new ownership, but nobody is really able to see the join. The kitchen team continue to produce assiduously researched contemporary cooking. Home-smoked salmon tian comes with potato galette and dill pickle, and pork is put to good use in rillettes and crackling salad with pickled apple. Meats come in pairs at main course: loin and belly of lamb, fillet and cheek of pork, breast and confit leg of duck, the last with Swiss chard, rhubarb and gingered mash. A trio of traditional grills offers the extra treat of duck-fat roasties. Populist desserts include chocolate fondant with salted caramel and yogurt sorbet.
