Modernised village pub with inventive cooking

The busy pub on the main road through the village functions as a quintessential rural hostelry, full of enthusiastic local custom in both bar and dining room. Despite modernisation it retains its pub ethos, and boasts a young, classically trained chef. A typical starter might be hazelnut-crumbed pigeon breast with peppered goats' cheese mousse and beetroot textures, while main courses take a more traditional tack with meats such as herb-crusted rack of lamb and wild mushrooms, or maintain the inventive pace for fish, perhaps sea trout with crabmeat sauce, braised fennel and clams. Finish with roasted pear in puff pastry and tarragon cream.
