The short drive from Fort William to Port Appin is a tonic in itself, but the location of the Airds Hotel, on the shore of Loch Linnhe, looking over to the Isle of Lismore, is guaranteed to unwind the troubled mind. In a long, low-ceilinged dining room, an atmosphere of considerate civility reigns, and the cooking is characterised by classical techniques delivered with polish and the kind of simplicity that allows quality to shine through. A single crisply toasted Tarbet scallop is joined by its best friend, an intensely flavoured Mull langoustine, in a starter further enriched by crumbled egg yolk and vivid watercress purée. That makes a fine prelude to a main dish of lamb – roast loin and breast and braised neck – simply served with buttery fondant potato, baby vegetables and another vibrant green purée, this time of peas. Fish could be Wester Ross salmon with tomato tortellini and lightly spiced houmous, while desserts such as sticky toffee soufflé with salt caramel sauce, given a jolt by assertive pickled apple and gentled by clotted cream ice cream, aim to send you away happy.
