Even if you're not nifty with a niblick, Meldrum House is a good place to marinate in the luxury of a turreted baronial pile. The deeply traditional country-house hotel has 350 acres of wooded parkland and its dining room makes a grand setting for modern Scottish country-house cooking, with ancestral portraits, real fire and burnished dark wood tables. Start on a rich note with smoked hare loin paired with confit leg fritter and celeriac textures, then progress to North Sea halibut with a tapenade crust, vegetable spaghetti and spring onion and potato sauce. To finish, pear soufflé and ice cream marry perfectly with Cognac caramel.
