Once a staging post for travellers on the road between London and Brighton, The Talbot is still the hub in the historic village of Cuckfield. It’s now a contemporary pub and restaurant that prides itself on making the most of the local larder, whether it’s Dark Star ales or seasonal dishes such as pigs’ cheeks, Puy lentils and home-made apple jelly; blackened salmon, chorizo, sugar snap and fennel velouté, saffron fondant with tomato and herb dressing; and blackcurrant crème brûlée with pistachio biscotti.
