Just off the main street in the market town of Bishop’s Stortford, the old Hawkes Brewery, founded in 1780, underwent a total restoration, with contemporary fixtures and fittings now enhancing the retained original features. It’s a dog-free zone that welcomes families, who are entertained on occasion by a resident magician as they dine in the vaulted cellar bar or high-ceilinged restaurant. Pick from a rotating choice of craft ales and speciality cocktails as you tuck into the likes of wild mushroom, truffle and spinach ravioli with poached duck egg, perhaps followed by lemongrass and chilli steamed salmon.
