The self-taught and award-winning head chef is passionate about sourcing the best ingredients for his exciting modern British dishes. You could opt for a pub classic such as game cottage pie, or look to the à la carte choices such as pheasant breast, wild mushrooms and pickled mustard seeds; braised rabbit, carrot cake and jus (a witty combination); chicken breast and wings, waffle, chicken jus and thyme cream; and goats’ cheese fondant, kale, braised baby onions, peas and lettuce.
