Close to Hitchin’s historic town centre, with rustic charm intact, open fire, and secluded garden with terrace, The Highlander continues to thrive in the capable hands of the Prutton family, who have run this Grade II listed pub for nearly 40 years. Today’s partnership between Charlotte Prutton and Eric Ransinangue has introduced a French flavour to proceedings. Excellent real ales such as Tring’s Side Pocket for a Toad are on tap (a beer festival is hosted in late May), the wine list is eco-friendly, and there is an extensive choice of malt whiskies. Concise menus worthy of a French bistro complete the picture, proposing the likes of duck leg confit with Sardalaise potatoes and red wine jus; or saffron, rocket and pea risotto with parmesan crisp.
