Le Cochon Aveugle

37 Walmgate, YORK, YO1 9TX

2 rosettes

Even with a newly opened additional floor almost doubling the covers to 30, this converted shop still deserves its 'small but perfectly formed' tag, serving up a fixed-price six-course tasting menu. The flavours may be classical, but the execution is thoroughly modern, as demonstrated in an arresting starter of grilled Yorkshire asparagus, quail's egg, lemon jam and parmesan. Mains are equally punchy - blow-torched mackerel turns up with salmon roe and a cauliflower farotto that uses spelt rather than traditional risotto rice, while spring lamb is paired with a light bean cassoulet and hazelnut crumble. For dessert, there may be Brillat-Savarin cheesecake, meringue and strawberry sorbet.
