Tim and Emma Ford have quite the knack of making visitors feel instantly at home in their white-fronted country house, where modesty of scale translates into finely detailed hospitality. In a relaxing room looking out on the garden, with clothed tables and seating in windowpane check, diners exchange pleasantries with each other at conversational level instead of whispers, staff are attentive without pestering, and the focus is on the food. Younger son Olly and his dad make a formidable kitchen double act, with cooking that is soundly based on excellent fundamentals, rather than following fashion up a blind alley. Everything looks and tastes of itself, so there's no need to refer back to the menu for a reminder, from an opening pairing of grilled Cornish mackerel and fresh crab with carrot and orange escabèche to a mightily effective dessert plate of tropical fruits adorned with coconut pannacotta, banana bavarois and mango sorbet. In between might come softly roasted, deeply flavoured veal sweetbreads in Madeira with punchy wild mushroom risotto, or perhaps red mullet with crushed and basilled new potatoes in saffron sauce. A splendid wine list bears all the hallmarks of genuine enthusiasm for the subject and adds to the overall enjoyment.
