While the decor and furnishings of the Leven Restaurant are all early 20th century - oak half-panelled walls, heavy drapes at tall windows, oil paintings, and a gilt-edged coffered ceiling - it's fast forward to today in the kitchen. Here the style tends towards modern British sensibilities, with sound, classical technique on display. Start with perfectly-timed scallops matched with chorizo, compressed apple and caper dressing. Next up, there might be pan-fried sea bass with red wine risotto, garlic purée and samphire. Puddings continue to show carefully considered combinations of flavour and texture, delivering velvety bitter chocolate tart with chocolate soil, pistachio ice cream and cherries.
