Reached along a tree-lined drive through 22 acres of deer park, Paris House is an ornately detailed Tudor manor built in the mid-Victorian era for the Paris Exposition, and shipped back to Bedfordshire in 19th-century flat pack format for reassembling. Inside, despite the mullioning of the windows, the decorative scheme is rather more in the now, with modernist light fittings and abstract glass ornaments in the private dining space, contrasting with lightly worn traditionalism in the main room. Phil Fanning's culinary production is full of ingeniously fresh fusion ideas, bringing Asian influences to bear on a modern British base. Menus are headed in Roman numerals by their numbers of courses, starting with a fairly leisurely VI at lunch, and extending into the full bells-and-whistles VIII and X at dinner. A Thai excursion might open the itinerary, with a pork gyoza dumpling in tom yum, along with pork cheek and squid noodles, before king crab turns up in malt and avocado dressing. Duck liver is pointed with fruity notes from sour cherry and blood orange, prior to a fish dish that might gather turbot, crayfish and clams for a kind of marine pot au feu. The main meat dish builds continuities with that duck liver dish, offering the breast now with red miso and mushrooms. A cheese dish that segues into desserts has become a popular mode, so expect something like beetroot Fourme d'Ambert and chocolate, ahead of a brace of dessert courses, perhaps an east Asian take on boozy trifle with mandarin, black beans, coriander and sake, before a pumpkin creation arrives with preserved grapes and apple to close the show. The attention to detail throughout is astonishing, and the wine flights worth the extra for a carefully selected roll call of matching flavours.
