The Cunliffe family have associations with this lovely house going back to the beginning of the 20th century. They've now reached the landmark 25th year running the place as a country-house hotel, and over that time have not for one second rested on their laurels, or slowed down in their quest to provide the very best levels of hospitality. Gilpin is surrounded by 22 acres of magnificent Lakeland countryside, with soaring trees and beautiful gardens, and the hotel itself is done out with a good deal of style and not an iota of chintz. The original features of the house (built in 1901) remain, but the impression within is of contemporary luxury and comfort (not modern and minimalist, but timeless and luxurious). There's also Lake House a short drive away which gives six more beautiful bedrooms, a lakeside vista, spa and a complimentary chauffeur service up to the hotel for dinner. As of 2012 there's a new man in the kitchen - Dan Grigg - and eating here remains, as ever, a highlight of a stay. The cooking is thrillingly contemporary, but clearly focused at the same time. There are plenty of creative ideas and preparations on show, everything looks wonderful on the plate, and the ingredients are second to none. Take a first-course salt cod dish - salt cod korma - which sees delightfully flavoursome fish topped with a fine curried crust and partnered with an iced raita and crisp rice - a winning combination. Follow on with a dish of Gloucestershire Old Spot pork that shows sharp technical ability: perfectly slow-cooked belly, succulent cheek and a crisp 'quaver' served up with liquid Granny Smith and celeriac. Dessert might bring forth a baba with charred pineapple and rum and raisin ice cream, or a malted mousse with caraway, quince and ginger crumb. There are wine suggestions for every dish, even on the light lunch menu, and the staff run the show with charm and professionalism.
