Gilpin Hotel & Lake House

In 1917 Joseph Cunliffe needed to escape the smog of Manchester after suffering lung damage during World War I, so he bought an Edwardian house in 22 acres of peaceful gardens, moors and woodland near Windermere. Apart from a blip when it left the family ownership for about 20 years, Gilpin Lodge is still run by the Cunliffes who are now well into their third decade of running the place as a country-house hotel done out with a good deal of style and not an iota of chintz. Its original features (built in 1901) remain, but the impression within is of timeless contemporary luxury and comfort. There's also Lake House a short drive away in its own 100 acres, which offers six more beautiful bedrooms, a lakeside vista and spa. As of April 2014 Alan O'Kane is the new man in the kitchen and eating here remains, as ever, a highlight of a stay. The cooking is thrillingly contemporary, but clearly focused at the same time. There are plenty of creative ideas and preparations on show, everything looks wonderful on the plate, and the ingredients are second to none. Muncaster crab with a crispy battered oyster and heritage carrots in various guises is a storming opener, or things might start with a dish that plays a riff on the textures of broccoli, turbocharged with Stichelton blue cheese and crispy cod cheeks. Follow on with Herdwick mutton - shoulder, belly and a dim sum-style wonton filled with rich meat, partnered with sweet potato crisps and a silky purée, miso and the spring season's last flourish of wild garlic flowers. For pudding there's an exemplary, indulgent take on a classic British sherry trifle. You're welcome to check out the globetrotting bins in the walk-in wine cellar, and the staff run the show with charm and professionalism.
