Built as a modest enough country house at the outset of the Edwardian era, Gilpin has been in the Cunliffe family since just after the Great War. Its stunning location above Windermere may take a little finding among the winding lanes hereabouts, but persistence is amply rewarded, for it is now a luxurious Lakeland hotel in 22 acres, , with fresh flowers and candlelight creating a refined atmosphere in all three dining rooms. Attentive, flawless service keeps things running smoothly out front, and the rest is up to Hrishikesh Desai, who comes with today's indispensable imprimatur of having won a TV cookery contest. His cooking is replete with technical skills, depth of flavour and clean, seductive presentation. Things take flight on the dinner menu, opening unexpectedly perhaps with a poached fillet of rose veal alongside its glazed sweetbreads, as well as smoked celeriac puree, tomato and pine nut salsa and an emulsion mustard dressing. Chilli-glazed poached lobster comes in a stunning composition with a fritter of the claw, avocado mousse, citrus and tobiko roe. Sticking with seafood, you might progress to expertly timed turbot with brown shrimps, hand-rolled macaroni and baby artichokes in an emulsified truffle dressing, but consider also roast Goosnargh duck, its leg meat in a spring roll, with an Indian-inflected chutney sauce of apple, ginger and sultanas. Everything makes a strong visual impression, and the matchless balancing of flavours speaks of ebullient confidence. The finishing flourish might be feather light almond and citrus cake with blood orange textures and bitter almond ice cream, or baked passionfruit cream with tarragon jelly, glazed raspberries and yogurt and black pepper sorbet. Canapés, appetisers and breads are all up to the mark, and there are some expertly chosen wines to conjure with.
