The late 18th-century townhouse not far from the Tivoli Theatre and the main square has become a supremely stylish restaurant with rooms for the modern age. It is designed with today's clean, uncluttered lines and gentle colour palette in mind, as is evidenced by a dining room that features plain walls and unclothed tables flooded with daylight from the French windows. Greg Etheridge cooks to a modern European template, offering a pre-theatre menu for Tivoli-goers, with seafood and fish a notably strong suit. A Ni?oise salad of fine chargrilled tuna looks the part, with pinkly meaty fish, crunchy green beans and garlicky olives in two colours. This might be followed majestically by a whole baked sea bass stuffed with lemon and oregano, robustly served with chorizo mash and crunchy seasonal veg. Meat could be a venison steak, served with red cabbage and dauphinoise in a juniper- and rosemary-scented red wine jus, with zesty lemon posset garnished with berry comp?te and sugared almonds to finish. A winter spin on Eton Mess adds figs and cinnamon apple to crushed pistachio meringue.
