The Royal is a stone-built pile nestling amid sub-tropical gardens on the Isle of Wight's south-eastern coast, a spot that unblushingly styles itself 'the Madeira of England'. It's a formal seaside hotel in the classic manner, with beautifully turned-out interiors and a thoroughgoing professionalism in the service style, best seen in the Appuldurcombe Restaurant, where tied drapes, crisp table linen and little flower vases compose a picture of reassuring civility. The menus are distinctly in the contemporary vein, though, with seafood a particular forte. There is as much intuitive precision in balancing flavours and seasonings in a classical fish soup with rouille as there is in the succeeding dish of roast sea bass accompanied by a portion of moules marinière, saffron potatoes and samphire. Meats are given more traditional treatments, as when roast loin and braised neck of local lamb arrive with baby artichokes and some of the island's celebrated wild garlic, while desserts aim to cosset with the likes of baked almond ricotta cheesecake with roasted peach and nectarine, and raspberry sorbet.
