The white-painted house, surrounded by 22 acres of woodlands, dates from the 16th century. The restaurant - Jeremy Wares at Houstoun House - sports deep burgundy walls, chandeliers and elegant unclothed tables. The kitchen relies heavily on quality Scottish ingredients and presents them in a modern, unfussy style. Start with smoked duck ham hock press with sauce gribiche and pickles, or poached salmon fillet with beetroot, pickled cucumber and horseradish, before moving on to mixed grill of seafood with farfalle, ratatouille and shellfish sauce, or roast chicken breast with haggis, roast vegetables and tarragon sauce. Finish patriotically with Clooty dumpling with vanilla ice cream and custard.
