In 1850, Gothic Revivalist architect Augustus Pugin was commissioned to work his wonders here, hard on the heels of his design for the interior of the new Palace of Westminster. Outside are 1,100 acres of verdant Sussex countryside. Inside is a rich green dining room with well-spaced tables draped in floor-length white linen, and pictures of landscapes and horses. A meal from the modern British menu might comprise medallions of monkfish, Jerusalem artichoke purée and truffle oil, followed by moist and tender roasted saddle of fallow venison, braised red cabbage and vanilla-roasted pear, with ricotta fritters, compôte of blueberries and Greek yogurt to finish.
