The Wolseleys of Staffordshire came to Ireland in the 17th century and fought on King William's side in 1690. In keeping with the chic surroundings, the place encompasses a stylish split-level dining room overlooking a garden courtyard, where smartly attired staff attend at equally well turned-out tables. Seafood is a forte, as is demonstrated by a starter of gin-cured salmon with pickled cucumber and a wasabi and cucumber emulsion. Meatier appetites are assuaged by a main course of roast chicken breast with butternut squash purée, fondant potato, and chorizo and barley jus. Finish with the signature lemon posset, served alongside confit orange and shortbread.
