Ballyseede Castle

This 16th-century castle surrounded by 30 acres of woodland is now a deluxe hotel. Its O'Connell Restaurant is a gracefully curved room with luxurious drapes at the windows, columns, oil paintings and a chandelier. The kitchen takes a contemporary outlook, with starters like breaded monkfish cheeks and prawns with home-made tomato and caraway seed ketchup and tartare sauce. Top-quality native produce is used throughout, evident in well-conceived, unfussy main courses: perhaps pan-fried salmon fillet with a creamy sauce of leeks, peas, dill and saffron, or roast duck confit glazed in honey and orange with a jus of port, grapes and orange. End with chocolate parfait and butterscotch sauce.
