On the square at the heart of the 880-acre Dartington Hall Estate, the White Hart's stone floors and beamed ceilings are true to the medieval roots of the restored 14th-century building. Cheery, young staff add to the appeal, as does a menu that's an enticing mix of local produce, modern ideas and global accents. Mackerel escabèche arrives in a palate-tingling medley with wasabi crème fraîche, grapefruit, pickled vegetables and dill oil, followed by Denbury lamb rump with crisp polenta cubes, spinach, tomatoes and pea purée. Finish on a zingy high with lemon cream with shortbread, lemongrass jelly and lemon sorbet.
