The Imperial's Victorian founders couldn't have chosen a better spot for their hotel, whose clifftop position has wide-ranging views over the bay and Channel. The kitchen chooses its ingredients diligently, making good use of fish and local produce, and turns out well-considered, carefully timed dishes. It has a flair for presentation, too, without over-complicating what appears on the plate. Home-made Brixham fishcake is a well-executed starter, served with pea shoot salad, or go for a pressing of ham hock accompanied by a pear poached in red wine. Next up, rump of highland lamb with spiced aubergine caviar and rosemary-flavoured potato fondant, and to finish, go for cherry pannacotta.
