Step inside the oak doors and you'll find everything expected of a 500-year-old castle: log fires, panelling, stone staircases, suits of armour, tapestries - the lot. The menu in the hexagonal Tower restaurant, with its arrow slits, is in the modern British pastoral style, with invention and heritage running side by side. Duck terrine - leg, breast and liver studded with segments of potato - with rhubarb jelly and crème fraîche makes a stunning starter, and might be followed by beautifully cooked fillet of brill with morels, asparagus, violet potatoes and red wine dressing. Bring the curtain down with rhubarb parfait with sweet beetroot, white chocolate and elderflower.
