Olivier Bertho's cooking is rooted in the great French traditions but is very much of the present, so roast cod fillet, for instance, is served with brandade and chorizo and bean cassoulet. Combinations in dishes intrigue without seeming wacky, as seen in a palate-pleasing starter of a pan-fried scallop with lime syrup, crab cannelloni and crispy squid with garlic and chilli. Meat dishes are just as well thought out: pan-fried braised lamb with pistachio pesto, redcurrant jus and spices, say, or roast breast of guinea fowl with creamy mushroom sauce, thyme-flecked sweet potato purée and Savoy cabbage. Dessert might be strawberry trifle with sparkling wine jelly and elderflower syllabub cream.
