The Punchbowl Inn at Crosthwaite

A small country house in the verdant Lyth Valley, The Punchbowl is one of Lakeland's homelier places, run with great civility by the hands-on team. A slate-topped bar and modern rustic furniture give the place a fresh look, and the substantial menu shows plenty of fashion-conscious technique. Seared wood pigeon, for instance, is accompanied by celeriac, blueberries, pear and chocolate. That might be followed by spot-on pan-fried salmon, bursting with flavour, with curried chickpeas, white crabmeat, pak choi and amaretti, or an equally well-composed dish of roast saddle of rabbit with crayfish mousse, apricots and potato purée. Vibrant combinations extend to puddings, seen in vanilla crème brûlée with Lyth Valley damsons, lavender and shortbread.
