The Peat Inn has been around since the middle of the 18th century and offering hospitality in one shape or form for over 250 years. It still has the look of an old inn, and a traveller arriving unawares will feel they have struck lucky, for this is a restaurant with rooms of genuine refinement. If you need a bed for the night, they've got eight beautiful suites to choose from, but it's when it comes to matters of nourishment that the extent of your good fortune becomes apparent. Geoffrey and Katherine Smeddle have run the place since 2006 and have invested heart and soul to create a dining destination of the highest order. The newly refurbished restaurant consists of three dining areas and makes a sophisticated setting for Geoffrey's poised contemporary cooking. The local area provides much of what the kitchen needs, giving a genuine sense of place, and the four seasons are clearly represented over the course of a year. Modern culinary thinking is not eschewed, but there are no over-embellishments or show-boating either - each dish stands on its own two feet, the ingredients allowed to shine. Via tasting (including a vegetarian version) and ? la carte menus, the kitchen turns out a first course such as honey-glazed breast of wild mallard with quince and cobnuts, or another where roast veal sweetbreads are matched with a rich sherry velout?. Main-course lemon sole is cooked on the bone to maximise flavour, and arrives with lobster croquette and a champagne velout?, while an inspired veggie option might be risotto of spelt with blue cheese and truffle. To finish, hot mandarin souffl? with a dark chocolate and Grand Marnier sorbet catches the eye. The wine list, like everything else here, is a class act.
