Geoffrey and Katherine Smeddle have run this 18th-century coaching inn with professionalism and charm since 2006, and it remains one of the stand-out destinations in Scotland's culinary firmament. It may look humble from the outside, but that belies the sybaritic set-up within, where luxurious bedroom suites mean you can settle in for dinner and forget about getting home afterwards. It's the kind of place where you study the menu in the comfort of a plush lounge, aperitif in hand, with a roaring log fire adding to the cossetting feel. Then it's into one of the trio of smart, beamed dining rooms which reflect the cottagey feel of the original building while maintaining the fine-dining factor. Geoffrey's cooking stands out from the crowd for all the right reasons: he starts from the ground up, using top-quality seasonal ingredients, and takes provenance seriously - locally-landed fish, for example, travels just 10 miles to the kitchen. Dishes are often multi-layered, but never overwrought, and there are no speculative ideas or smoke and mirrors trickery. Flavours are clearly delineated so that they work together rather than fight it out on the plate. Things kick off with canapés and an amuse-bouche - cauliflower pannacotta with parmesan crisps and foam, say - before a first course such as braised veal cheek and crisp sweetbreads with roast cauliflower, turnip, and hazelnut dressing, or langoustine tempura with crisp basil, oyster pannacotta and avocado wasabi purée. Next up, perhaps roast sea bream with poached potatoes, fennel and lobster thermidor sauce, or loin of Cairngorm venison, served in earthy partnership with Savoyarde potatoes, hispi cabbage, venison haggis and quince. To finish, prune and Armagnac soufflé and ice cream rises to the occasion. There is a tasting menu, with optional wine flight, and while we're on the subject, the cellar runs to 400 bins. The Peat Inn is the AA Wine Award Winner for Scotland 2014-15.
