Geoffrey and Katherine Smeddle have run this one-time coaching inn with professionalism and charm since 2006, and it remains one of the stand-out destinations in Scotland's culinary firmament. It may look humble from the outside, but that belies the unfettered comforts within, where luxurious bedroom suites mean you don't have to worry about getting home afterwards. It's the kind of place where you study the menu in the comfort of a plush lounge, aperitif in hand, with a roaring log fire adding to the cossetting feel. Then it's into one of the smart, beamed dining rooms (three small rooms make up the space), which reflect the cottagey feel of the original building whilst maintaining the fine-dining factor. Geoffrey Smeddle's cooking is first and foremost based on superb produce, these prime ingredients drawn substantially from Scotland's fabulous larder, and prepared with craft, care and creativity. Things kick off with canapés and an amuse-bouche such as cauliflower pannacotta with parmesan crisps and foam, before a first course such as wood pigeon, served as smoked breast and cannelloni, alongside a crisp tongue bonbon, ceps purée, figs and cob nuts. Next up, perhaps lemon sole fillets with poached lobster, Jerusalem artichoke fricassée, young fennel and lobster sauce, or roast breast and confit leg of wild Mallard, served in earthy partnership with black pudding, girolles, damson compôte, rösti potato, pearl barley and autumn roots and fruits. Fads and fashions are tempered by a cool head, but these are complex, ambitious dishes with a good deal going on. To finish, hot strawberry soufflé with balsamic sorbet rises to the occasion. There is a tasting menu, with optional wine flight, and whilst we're on the subject, the wonderful wine list is clearly a labour of love.
